French Onion Pot Roast

Ingredients
- 3ish lb chuck roast
- 1 tbsp Garlic powder
- 1 tbsp dried Rosemary
- 1 tbsp dried Thyme
- 2 tbsp Avocado Oil
- 1 stick Butter
- 2 large Yellow Onions, halved and sliced thin
- 4 cloves Garlic, minced
- 1/2 cup Red Wine
- 1 tbsp Worcestershire Sauce
- 5 cups Beef Broth
- 2 bay leaves
- Salt to taste
- Pepper to taste
- 1 French Baguette, thinly sliced
- 2 cups Mozzarella cheese
- Chives for garnish
Instructions
- Let roast get to room temp before preparing.
- Preheat oven to 400 F.
- Coat roast with garlic powder, Rosemary, thyme, salt and pepper.
- In a dutch oven, add avocado oil and heat over medium. Add roast, sear both sides (4ish minutes per side, should be lightly browned with a crust starting to form). Remove roast from Dutch oven.
- Add butter, garlic and sliced onion into the Dutch oven on medium heat, cook for 5 minutes or until onions start to become translucent. Add in wine and worcestershire sauce, cooking for 5 more minutes.
- Add roast back to pot and top with beef broth and bay leaves. Cover and transfer to oven for 30 minutes at 400 F.
- Reduce heat to 300 F and roast for another 2 1/2 hours or until roast is fully cooked to your liking. Remove the lid and discard the bay leaves.
- Remove roast, shred and place meat back in the dutch oven.
- Top with sliced bread and mozzarella cheese. Place back in oven uncovered until the cheese turns golden.
- Remove from oven. Garnish with chives and serve over mashed potatoes!
